My Medication...Chocolate!

So I tweeted about making chocolate chip zucchini bread today and Christy requested the recipe. So, here you go. This, in addition to ice cream, oreos and chocolate milk, is how I am medicating myself this month and getting through August (which, if we are being honest, I would just like to sleep through please).

This recipe originally comes from the wonderful Elise of Simply Recipes (who I got to meet at Blogher and I TOTALLY gushed over her, I may or may not have scared her -- yeah, she is AWESOME!)

I put my changes in italics next to the recipe.

Zucchini Bread Recipe

Ingredients

2 eggs, beaten
1 1/3 cup sugar
2 teaspoons vanilla
3 cups grated fresh zucchini
2/3 cup melted unsalted butter -- 2/3 C. unsweetened applesauce
2 teaspoons baking soda
Pinch salt
3 cups all-purpose flour
1/2 teaspoon nutmeg
2 teaspoons cinnamon
1 cup chopped pecans or walnuts (optional) -- no thank you
1 cup dried cranberries or raisins (optional) -- no thank you again
Lots and lots of dark chocolate chips. Probably about 1/2 a bag, maybe a full bag if I'm feeling really chocolaty ;)

Method

1 Preheat the oven to 350°F (175°C). In a large bowl, mix together the sugar, eggs, and vanilla. Mix in the grated zucchini and then the melted butter. Sprinkle baking soda and salt over the mixture and mix in. Add the flour, a third at a time. Sprinkle in the cinnamon and nutmeg and mix. Fold in the nuts and dried cranberries or raisins if using.

2 Divide the batter equally between 2 buttered 5 by 9 inch loaf pans. Bake for 1 hour (check for doneness at 50 minutes) or until a wooden pick inserted in to the center comes out clean. Cool in pans for 10 minutes. Turn out onto wire racks to cool thoroughly.

Makes 2 loaves.

Enjoy it my friends, it is WAY too yummy. Makes 2 loaves and they will be gone within 2 days at my house!

Ok, so after having a couple of comments about this great idea of chocolate and zucchini, I had to share another one of Elise's awesome recipes that my family LOVES. Chocolate Zucchini Cake. Yep, it ROCKS!!!!!!!!!!! So, after you've tried the bread make this cake. You won't be sorry.

I would have never thought to mix Zucchini and chocolate...but man it's sounding good right about now :-)

I have a great zucchini bread recipe, but never though to put chocolate in it. But now that I'm thinking about it I also have a recipe that I haven't been brave enough to try called "zucchini brownies!"

okay, this sounds scarily simple. i will be so impressed with myself if a) i actually make it, and b) it turns out as yummy as it sounds. i'll keep you posted!

One of the true tragedies of this summer has been the failure of our zucchini plants to produce anything. We've had 3 zucchinis start and then die. I love me some zucchini bread!
